Breakfast Tacos

*If making breakfast tacos for a LOT of people, fold up a big stack of corn tortillas in foil and stick them in the oven to warm up. Have a variety of ingredients or fillings out, and let people build their own. Instructions: Scramble eggs any way you like, with whatever ingredients you like. Set aside. This is your taco filling. You can prep beans, sausage, carne adovada, carnitas,  onions, tomatoes, whatever you think goes good with eggs in a breakfast taco. Once ingredients are prepped, cook corn tortillas on a lightly oiled (or dry) nonstick pan until lightly toasted on each side. This brings out the flavor and makes the tacos hold stronger. Plate tortillas with fillings topped with cheese, salsa, cilantro, Cholula, green chili, cilantro lime ranch sauce etc. whatever you like. Eat hot. Plan to serve an adult 3 tacos on one plate. If these can't be eaten right away, wrap in foil and keep warm.
