Princess Diana's Pudding (Christmas Pudding)

This picture is pre- baked. I forgot to get one afterward! In the picture I didn't have golden raisins, and forgot to put the raisins in the middle so they ended up on top.

This delicious dish is a heavy load of fat, dairy,  white bread and sugar. It is delicious if you like British pudding. Kind of like a French toast casserole. I had a day old loaf of homemade bread I needed to use up and this was perfect for it. 

It is recommended to top with fresh strawberries and whipped cream or ice cream. I think a warm syrup would be good like my homemade buttermilk syrup. 

Instructions:

*If, you can remember, start the night before by soaking three ounces of golden raisins in 1/4 cup of apple juice with a little apple cider vinegar. Leave overnight. If you can't, prepare this mixture first so raisins can soak as long as possible. 

12 slices white bread, cut into 1" cubes (I used leftover homemade bread, crusts removed if you like and you just need enough to fill a 9 x 13 pan about a centemeter from the top)

4oz (1/4 cup) butter, melted

Raisin- apple juice- vinegar mixture

9 eggs yolks

3/4 c. sugar

1 tsp vanilla

1/2 c. whole milk

2 c. heavy cream 

sugar to sprinkle on top before baking to create a creme brulee effect. 

Preheat oven to 350° and spray 9x13 pan. 

Put bottom layer of bread down and top with raisin juice mixture, sprinkling raisins and juice on evenly. Then put the rest of the bread down and pour butter over evenly. Press spread gently to help distribute butter. 

Whisk together egg yolks and sugar and vanilla.

Heat milk and cream, stirring constantly, almost to boiling. Temper into egg mixture. 

Pour warm egg mixture evenly overall and allow to sit and soak into bread for 20 minutes. You don't want any dry bread. 

Sprinkle with sugar on top, or any decorative sugars, and then slide into oven. 

Bake in the oven for around 30 minutes, until top is lightly browned and it is thoroughly hot and cooked in the middle. You don't want to overcook, but you don't want it to be runny and wet in the middle.

Cut squares, and serve warm with syrup or strawberries, whipped cream, or ice cream.
