Mushroom Barley Soup

A hearty, healthy soup. Barley softens but doesn't become waterlogged like noodles. 

Onion, celery, carrots, garlic, four or more mushrooms, 1/4 cup of grape juice, two bay leaves, 1 tsp dried thyme, 1 Tbsp tamari, and two-thirds a cup of barley. Salt and pepper to taste.
