Greek Yogurt Cake (High Protein Breakfast or Dessert))
4 eggs
2 cups full-fat Greek yogurt
5 Tbsp tapioca flour or cornstarch
5 Tbsp powdered sugar
1/4 tsp. vanilla
Berries and powdered sugar for topping. Or honey or maple syrup, etc.
Butter a six or eight inch pan. Whisk the eggs well and then add in the yogurt and other ingredients and whisk well until smooth with electric beaters. Pour into prepared pan and bake at 350 for 1 hour until golden on top. You can serve it warm, and it is also recommended to be served cool. Serve topped with berries and whipped cream or other toppings as desired.
