Grandma Theda's Dilly Beans
It seems we always had a jar of these pickled green beans from Grandma!
2 pounds trimmed green beans
1/4 c. salt
4 cloves garlic
6 tsp dill seed
1 tsp cayenne pepper (optional)
2 1/2 c. vinegar
2 1/2 c. water
Pack beans, lengthwise into hot jars, leaving 1/4 inch headspace. To each pint, add 1/4 tsp cayenne pepper, 1 clove garlic, and 2 tsp dill seed.
Combine remaining ingredients and bring to a boil. Pour over beans, leaving 1/4 inch headspace. Remove air bubbles. Adjust caps. Process pints and quarts 10 minutes in boiling water bath. Yield: 4 pints
