The Best Zucchini Bread
Sitting out at the river at Villanueva, there were many of my favorite mom friends, kids everywhere playing in the water, and I brought this bread which was very much appreciated and absolutely devoured!
1/2 c. vegetable oil
1/2 c. brown sugar
1/2 c. white sugar
2 large eggs
1/4 c. applesauce or sour cream
2 tsp vanilla
1 1/2 c. shredded zucchini
1 3/4 c. flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 350, and grease a 9x5 loaf pan. Whisk the sugars and wet ingredients together. Add zucchini and stir together well. Whisk dry ingredients together and then stir them in until just combined. Do not over mix. You can add chocolate chips or nuts if desired.
Bake for 55 to 70 minutes until a toothpick inserted into the center comes out mostly clean with zero raw or wet batter on it. This is from Sally's Baking Addiction.
