Sopaipillas or Fry Bread
New Mexican sopaipillas are typically served alongside every meal as dessert in restaurants. Like Navajo fry bread they're delicious with just honey or Nutella. It is phenomenal with Manjar or dulce de leche which is just basically sweetened condensed milk that has been cooked until it's thicker and browned. Pat would love a cherry, strawberry, or lemon pie filling but that's just getting crazy. Hot out of the oil you could coat them in a cinnamon and sugar mixture which would be good also.
2 c. flour
1 Tbsp baking powder
1 tsp (scant) salt
1 c. milk
4 c. oil/fat for frying
Mix together. Knead 5 minutes. Let rest 5 minutes. Make 8-12 balls. Roll out flat like a tortilla and then placed into the hot oil turning almost immediately so they don't burn. (I like to do this in my cast iron skillet).
When both sides are done, remove from oil and place onto a plate covered in paper towels. Serve with toppings of choice, traditionally honey! (I wish we still had our most delicious raspberry honey from Craig Noorlander!)
