Meatloaf

 



1 lb ground beef, broken up and rinsed with water in a fine colander. Set aside to drain. Then place in large bowl. Add in: 

2 Tbsp Claude's BBQ Brisket marinade, 1-2 Tbsp  Worcestershire sauce, 1 minced onion, 1 Tbsp parsley, 3 cloves minced garlic, 1/2 c. bread crumbs (crushed saltines or croutons), 1Tbsp Italian seasoning, salt, pepper, 1/2 cup milk, a couple squirts of ketchup, and an egg. Mix well, but don't overmix. Meat should be loose (wet) and light when forming loaf. 

Spray 8x8 pan or similar and form meat mixture into loaf shape. Bake uncovered at 350 for about 30 minutes. If there's a lot of liquid, pour most off.

Top with a ketchup mixture and return to oven for an additional 30 minutes until cooked through and blackened on top. 

Serve with mashed or baked potatoes and vegetables. 

*Instead of the sweet ketchup traditional topping, some people like a mushroom gravy (that can also go on the mashed potatoes).
