We had a wonderful Christmas and had lots of cookies and treats out on the bar for everyone who came by to snack on. All the family were here along with Jasmine, Nani, missionaries, etc. Leia really wanted to make fudge, so though I'm not a huge fan, we made this recipe and it turned out pretty good. It's at least a placeholder until we find a better recipe. I would use milk chocolate instead of semi-sweet for at least half of it..
3 c. semi-sweet chocolate chips (it turns out so chocolatey that I would say maybe to try half milk chocolate)
2 c. mini marshmallows
1 can sweetened condensed milk
2 Tbsp butter
pinch salt
1 tsp vanilla
Add-ons like 1 cup nuts of choice (good idea to lightly toast them and let them cool completely first).
Butter and 8x8 or 9x9 pan.
Microwave at 45 second intervals the first 5 ingredients (through salt), stirring between each time until smooth and creamy.
Stir in vanilla and whatever mix-ins you choose (toffee, candy, etc.) and spread immediately in an even layer in the buttered pan.
Cool in fridge 1-2 hours. You can eat it anytime though, and you can leave it out on the counter after that, the refrigeration is just solidify it and let it sit for a bit.
