Croque Madam
Croque Madame (French grilled cheese and ham covered w/cheese sauce, broiled, then soft egg laid on top)
Yummy Bread, toasted lightly
Ham slices
Shredded Monterrey Jack cheese or other
Eggs
In oiled saucepan on low heat, cook eggs sunny side up, where yolks are runny and seasoned with salt and pepper.
While doing this, preheat oven to 350. On a cookie sheet, lay down your bottom pieces of bread, then place a slice of ham on top, sprinkling of cheese, and then the top piece of bread. Cover the whole sandwich with the cheese sauce so it spills over the edges and covers completely. Put in oven to broil tops for about 5 minutes. Serve each sandwich on a plate, topped with an egg. This is a fork and knife type of meal!
To simplify for many people you can do it a little less fancy by taking a loaf of French bread, slicing it in half lengthwise, topping each half with the cheese sauce and toasting under the broiler, then adding ham and closing the sandwich to slice. Add green chili to give this French beauty a New Mexico twist.
