Misty's Granola Bars



These are delicious granola bars my friend Misty shared with me. Great healthy breakfast, lunch, or snack! (I needed to use up raisins, so I used those in place of craisins and chocolate chips in the picture above).

Preheat oven to 400 degrees.

6 c. old fashioned oats
1 c. nuts or pumpkin seeds
1/2 tsp salt
1 c. craisins
1/2 c. coconut flakes (unsweetened)
1/2 c. chocolate chips
3/4-1 c. honey
1 tsp vanilla
3/4 c. melted coconut oil

Add dry ingredients to large bowl. Mix. 

Add honey and coconut oil to medium microwave safe bowl, and warm 30 seconds at a time, stirring each time until melted together. 

Por hot honey-oil mixture over dry and mix until everything is coated and well-mixed and sticks together when compressed. You may need to add a little more honey. 

Pour into a well-greased cookie sheet and press flat with greased hands or something flat that is greased. This is hard! It sticks to you. But it has to be pressed flat very tightly to make bars that will hold together. 

Bake at 400 degrees for 10-12 minutes on a prepared baking sheet until medium browned.

Let cool 10 minutes, then make cuts for bars. Then let cool at least 1/2 hour before lifting. These can be wrapped and frozen for school lunches. Otherwise they are shelf-stable for a week or so in airtight container.

*Mine turned into granola when I tried to lift them. Grrr...
