Salad Bar for a crowd (a la Sweet Tomatoes)

Not gonna lie, this is a lot of work. We all love a great salad bar, but to buy, wash, and prepare all those ingredients... I wish it magically appeared everyday. We did this for Dallas, Gina, Isaiah, Tessa, and friends. It was a big hit. Great dinner/lunch for crowds because they can pick what they like! Start in the morning for that night's dinner. 

-Season (steak seasoning, Lawry's, and salt), and roast chicken breasts in oil flipping over until deeply browned on the outside and cooked through as pictured below. Let cool, then refrigerate for a couple hours, then dice, making sure to remove any gross stuff. Keep refrigerated until ready to serve.

-In a humongous bowl mix together lettuces. Wash well first in a salad spinner and chop. We used a head of ice-berg, a box of spring mix, and several bunches of Romaine. 

-other ingredients to put on buffet:
pickled beets
chickpeas and red kidney beans
olives
cheeses (cubed cheddar, Swiss, etc. and Bleu cheese crumbles)
green onions
red onions
tomatoes
broccoli 
bell peppers
carrots
cucumber
croutons
bacon bits
salad mix of seeds and craisins
noodles/pasta salad
potato salad and/or hot baked potatoes/or fried potatoes with toppings like chili, sr. cream
homemade Ranch dressing
Olive Garden Italian dressing
sweet strawberry dressing
cornbread
rolls




This night we had hot roasted, diced potatoes, well seasoned with chili, sour cream, cheese, etc. on the side and Pat's strawberry lemonade.
