Chocolate Cake with White Frosting- Mels Kitchen Cafe
The cake fell this time Oh well! Still tastes good. It's a great cake and I like the contrast of really dark chocolate with the white frosting. It's not actually bitter like dark chocolate. I like stabilized whip cream frosting with this cake, but a lot of people love Magical Frosting. I can't get it to work and it uses so much butter that it makes me angry when it flops. Either way, enjoy!
1 1/4 c. unsweetened cocoa powder
2 1/2 c. flour
2 1/2 c. sugar
2 1/2 tsp baking soda
1 1/4 tsp baking powder
1 1/4 tsp salt
2 eggs plus 1 egg yolk
1 1/4 c. warm water
1 1/4 c. buttermilk
1/2 c. plus 2 Tbsp vegetable oil
1 1/2 tsp vanilla
Prepare two 9" round cake pans by spraying, adding a wax paper round, spraying again, and flouring. Preheat oven to 350. Sift dry ingredients and set aside. Beat wet ingredients together, and then add dry. Mix thoroughly. Divide between two pans and bake for 32-35 minutes until toothpick comes out clean or with moist crumbs. Do not overbake!
