Benefits of Kimchi

Not a recipe, unfortunately

 I love snacks like pickles and green olives that are sour and salty. Kimchi is like those (but spicy too!), but naturally fermented so it is good for your gut and immune health. It may improve your cholesterol, heart health, and inflammation too. It supports brain and eye health, and can support weight loss. There are many other benefits associated with Kimchi, and naturally fermented foods. My friend Dana from Romania ferments her own sauerkraut every year from her home grown vegetables. I wish I knew how to do that, but for now I keep a jar of Kimchi in my fridge. I like the taste, and enjoy a bite or two daily. Keep refrigerated!
