Foil Dinners for Campfire

A young women's leader once did this with us girls and I'm doing it tonight with my primary girls! I remember it being so delicious that I've always remembered it. Foil dinners are pretty easy to make, just make sure you have thick foil:

Dice up some red potatoes, onion, and carrot, and toss with a little oil and seasonings. Top with hamburger meat shaped into a patty or mini meatloaf, (that has been seasoned also), and put a spoonful of cream of mushroom soup atop the hamburger. It will cook into the burger and potatoes adding flavor and creaminess, like a gravy. 

Fold up foil dinners one way and then the other, pinched tightly, and place in the fire. You want it to cook slowly, so on the outside edges of the fire, turning every 10 minutes or so. We try to keep to the rocks near the fire. 

The hard part is knowing when it's done. It's ideal to guess perfectly and only have to open the packets once and viola! But we usually guess wrong, or some are perfect and some are raw/burnt. And sometimes we end up with totally burnt charcoal. I wish I had helpful tips on that, but alas. Still, when it turns out right- it's so great! (Pat does NOT agree, and gets cranky making these- probably because I'm scared of the fire and make him do it). But they're just so fun to me. (Be careful! They're hot!!!)

These can be made up at home and then cooked at the campsite. Keep cold in a cooler. Serve with ketchup or other sauces as desired. 

These can also be cooked on a grill or in a 350 degree oven for maybe 30-45 minutes depending on size.
