Steamed Broccoli


This is a quick side to go with dinner (not actually in a steamer), and only takes 10 minutes start to finish. 
Wash and chop a head of broccoli. Some people peel the outermost layers off the broccoli that are tougher, but it's not necessary. Lightly butter a skillet and put it over high heat. Add the cleaned broccoli pieces, a pinch of salt, and a cup of water. 

Cook with the lid on, over high heat for about 3 minutes to steam. Broccoli will turn bright green. Remove lid and turn broccoli, and continue to cook a couple more minutes until liquid is boiled off. (You don't want broccoli to turn too soft or lose it's color.) Serve! If desired, add more salt and butter for more flavor. 

The kids like broccoli raw if there's Ranch typically, or in broccoli salad. Broccoli can also be good roasted with steak seasoning.
