Panzanella Salad



I first heard about this Italian salad from Rachel Ray. It's kind of like pasta salad but instead of pasta, you break up day-old bread into it. A great way to use up old bread instead of wasting it!

It's easy! 

Combine torn bits of old bread, with tomatoes, and diced avocado. Toss that with lemon juice, salt, and your favorite Italian dressing. Let it sit 10 minutes refrigerated, and serve! Delicious!

You can make it more fancy with other ingredients and fresh herbs if you like. A great side salad, but I use it for a lunch meal.
