Favorite Beef Roast for family dinner or St. Patrick's Day
This is my go-to for an awesome roast: great for any Sunday family dinner. The missionaries love it, we love it, our family loves it! We served it when all our family came to visit with Mexican rice on the side, sour cream, street corn, and biscochittos. But it goes great with potatoes in any form too. See other ideas below.
- Roast: cook a beef roast in a Dutch oven on the stove, by seasoning the outside of it like a dry rub (paprika, Lawry's, Salt, Monterrey Steak Seasoning, garlic, onion), searing the roast in oil, and then braising the roast in beef consume (or something like a Lipton onion-beef soup mixture), and a jar of pepperoncini's (with the vinegar juice). That's all!
- If you want, in this liquid, surround the roast with onions, carrots, and baby potatoes, and put Dutch oven in the oven to cook until the meat is falling apart tender (at least 4-8 hours depending on roast size). This is served with au jus, gravy, or sour cream on the side.
Also great for St. Patrick's Day because of the bit of sour from the pepperoncini's. Just add some cabbage on the side. You can omit the baby potatoes, and serve mashed potatoes, scalloped potatoes, or colcannon on the side if you like. Serve with green frosted rolls and an all-green vegetable platter. For dessert, maybe Kim's mint brownies, or green frosted cupcakes would be fun.
