Queso
We'll always remember visiting Uncle Mike and Aunt Shelly in El Paso Texas and the excellent queso they made us. I never did get that recipe, but here's a good one (1/2 it or 1/4 it for smaller groups):
1lb block of Pepper Jack cheese
2 lb block of Colby Jack Cheese
1 pkg cream cheese
1 can Mild green chili or fresh roasted (4oz)
1 can Rotel (no salt)
Place all ingredients in a well-seasoned cast iron skillet and roast in oven until hot and bubbly. Stir together and serve! Can add seasoned beef or chicken too if desired. Serve with tortilla chips that are lightly salted because otherwise it is too salty. Also really good to dip bread into like fondue.
Pat buys ready made queso (Que Bueno nacho cheese sauce) at Costco that he warms up and eats a lot too.
