Elegant Ice-Cream Treat




This may seem silly, but when I was in Chile, my Mamita in San Clemente served us a small dish of ice-cream (without toppings), with that little wafer cookie sticking out on the side, and I thought it was the cutest thing. I LOVE wafer cookies. So simple and delicious and so cheap. All toppings were too sweet for Chileans. Their ice-cream wasn't even as sweet as ours either. I loved it! The wafer cookie is kind of like having a cone, so it goes well. 

This is great with peppermint ice-cream, mint chip, anything! Just pick a cute cookie to go with it. It's so simple when we need a dessert for dinner with guests. 

For a ward Christmas party once, we made this dessert in individual cups as pictured above. We layered a scoop of good vanilla ice-cream, homemade Hot Fudge, whip cream, a sprinkling of crushed candy canes, and a vanilla wafer cookie sticking out on the side. Simple and elegant for a church dessert, and delicious too! (Everyone loved it, except for the lactose intolerant. Oops).
