Olive Garden Zuppa Toscana


 This makes a BIG pot of soup to feed 10 with some leftovers. Feel free to halve or quarter the recipe.

Salt as you go along, a little here, a little there. It's weird for me to write down recipes as I just make the soup without measuring every little thing. 

1 large onion, diced and sautéed. 
Add to that 1 package of Jimmy Dean HOT sausage and 2 cloves of garlic, minced.

Cook together until sausage is browned.

Add 1/2 c. flour into the sausage onion mixture and stir around to cook it for a bit.

Now add 12-14 cups of liquid (about 8 cups of broth*, and 4-6 cups of milk). Whisk in slowly so the flour gets out all it's lumps and thickens. *I used beef broth- but can also use chicken

Bring to a boil. Add 1 Tbsp Italian seasoning/herbs, and a bit of turmeric and paprika for color. Also add 4 large russet potatoes that have been peeled, washed, and diced fine, AND one bunch of kale that has been washed and chopped fine. Reduce heat to a simmer. Cook all this together for 30-45 minutes until the potatoes are soft. 

Add in 2 cups of heavy cream to smooth it all out and simmer another 15 minutes. 

Enjoy with a good bread on the side. Another one of our favorites!
