Boston Creme Pie
I just make my favorite white/yellow birthday cake, use a pudding filling (recipes in frostings and fillings), and top with a chocolate ganache frosting poured over the top to completely cover. (also found in frostings and fillings)
Always do this with the cake on a rack over a cookie sheet so kids can eat the chocolate that falls.
Ganache on this is 1/2 cup warm cream, 4oz semisweet chocolate chopped up into the warm cream, and stirred until smooth with 2 Tbsp corn syrup for shine
