Spaghetti Squash


Spaghetti Squash Bowls
Cut a spaghetti squash in half lengthwise.  Scoop out all the seeds.  Brush with evoo, and sprinkle with salt and pepper.  Bake on parchment at 400 degrees about 45 minutes until browned and soft.  With a fork, fluff out the squash insides to look like spaghetti noodles. Enjoy like this, it tastes great with just butter, salt and pepper. Or top with marinara sauce or enchilada sauce and cheese if desired.  Return to oven until cheese is melted and sauce is hot.  Remove from oven, sprinkle with parmesan, cilantro, green onions, whatever you like and serve immediately.
