Soft and Chewy Oatmeal cookies with coconut from Mel's Kitchen Cafe

These are FANTASTIC!

1 c. butter, softened (2 sticks)
1 3/4 c. brown sugar, packed (tastes good if you do 1&1/4 c. light brown sugar, and 1/2 c. dark)
2 eggs
1 Tbsp vanilla
1 c. rolled oats (blended in a food processor or blender for 30 seconds, if desired)
2 1/4 c. flour
1 tsp baking soda
3/4 tsp salt
1 c. unsweetened coconut flakes (if you really hate coconut, you can add 1 c. oats, but try it!)
1-2 c. semi-sweet chocolate chips (or raisins)

Preheat oven to 350 degrees. Whip butter and sugar together for 3-5 minutes. Add eggs and vanilla and whip together for another minute or two. Use stir setting to stir in  oats, flour, baking soda and salt until halfway combined. Then add coconut and chocolate chips or raisins and stir until combined.

Shape cookie dough into balls with a #40 scoop. Bake for 10-12 minutes.
