Scalloped Potatoes


 Cook 6-8 potatoes in the Instapot until perfectly done. When cool enough to touch, peel, and slice into coins. Place into a greased 9x13 pan. 

Make a cream sauce out of onion, garlic, butter, oil, salt, pepper, flour, chicken broth, heavy cream, and shredded cheese (swiss and cheddar). Potatoes always need more salt than you think. Once the sauce it rich and thick, pour over potatoes, and stir around to make sure each one is coated. 

Place in a 400 degree oven for 30 minutes until browned and bubbly. A great filling side-dish with dinner.
