Kolaczki (Polish Cookies)
Super awesome cookie with a pretty appearance, like light pie-crust with a sweet jam center. Use red jam at Christmastime.
1/4 c. sour cream, room temperature
1 pkg active dry yeast
1 large egg
1/4 tsp salt
1 c. cold butter, cut into pieces
2 c. flour + more for rolling
peach or other preserves or cinnamon-sugar topping
Preheat oven to 400.
Combine sour cream and yeast in a small bowl and set aside for about 10 minutes. The mixture will become creamy. Using a rubber spatula, stir in egg and until smooth. Set aside.
Cut butter into flour with salt until it resembles coarse meal. Stir in sour cream mixture until dough comes together.
On a lightly floured surface, roll out dough to a 1/4" thickness. Using a 2" round cookie cutter, cut out circles, and transfer to an ungreased cookie sheet. Cover with a clean towel or plastic wrap. Let stand 15 minutes.
Make a thumb print in center of each cookie. Fill with 1/2 to 1 tsp of preserves. Bake until edges are golden about 12-15 minutes. Remove cookies to wire racks then top them with the sugar glaze while still slightly warm.
Sugar Glaze:
1 c. powdered sugar
1 Tbsp water
Amount of water may vary, just get it to a drizzling consistency. Use glaze immediately.
