Green Beans
Trim off ends of green beans with a pair of scissors. Takes forever, but I like it because I can inspect each one and trim off bad parts easily. With a knife you have to spend forever lining them up anyway.
Wash, and place into a saucepan with about a cup of water on the highest heat.
Add a small pat of bacon grease, butter, or oil and a small sprinkling of salt. Sugar too if you desire. Stir constantly while cooking. The water will evaporate completely and they will be bright green when they're done. My friend Melinda likes to cook these until they're browned and crispy.
You can add minced garlic for the last 2 minutes of cooking and a spritz of lemon if you like. These would go great over Fried Rice to make a meal, or on the side of a dish.
*Or you can just boil these plain for 5 minutes for the greatest ease.
