Fennel Salad
Take about 1 fennel bulb per 1-2 people, and remove outer layer.
Slice thinly into rings and then give a rough chop.
Place all pieces into a colander, rinse and drain.
Place in serving bowl/dish/plate.
Squeeze fresh lemon juice over all, a drizzle of evoo, and a sprinkle of salt and pepper. Serve!
Fennel is like sweet crunchy licorice. Weird, but good. Different. Add some of the feathery fronds that almost look like dill for added color, as a garnish or mixed into the salad.
