Christmas Molasses (Gingerbread) Cookies
These taste like Christmas!
¾ c. butter (original recipe called for shortening, or you could sub coconut oil)
¾ c. sugar
¼ c. molasses
1 egg
2 c. flour (may add a bit more if dough is too sticky)
2 tsp baking soda
½ tsp cloves
½ tsp ginger
¼ tsp salt
1 tsp cinnamon
raw sugar crystals (for rolling)
Preheat oven to 350. Cream butter, sugar, and molasses. Mix in egg.
Add dry ingredients and mix until combined. Make 1” balls. Roll in big raw sugar crystals. Bake 8-10 minutes. We like these cooked soft. Makes 24.
