Best White Birthday Cake Ever! (or adjust for any flavor)

Evan's 16th birthday was chocolate with cream cheese buttercream





Cake is sturdy for stacking and frosting, but very moist and light at the same time. Cake is pictured with a cream cheese frosting and fruit (and Hogwarts colors for Charles, ha ha). But the buttercream below is also phenomenal!


1 box white cake mix (like Betty Crocker Super Moist) or any flavor
1 small 3.4 oz box of Jello Pudding Vanilla flavor (or cheesecake or any flavor)
1 c. sour cream
1 c. vegetable oil
4 eggs beaten
1/2 c. milk
2 tsp pure vanilla extract
high altitude: 1/4 c. flour plus 1/2 c. water

Preheat oven to 350. 

Mix in a very large bowl and cook in two 9" or 10" rounds. (My 10" rounds each make a 1 1/2 inch cake layer. Frosted cake will be about 4" high).

The Best Vanilla Buttercream (dye it any color)
1 c. butter, softened
1 tsp pure vanilla extract
4 c. powdered sugar
2-4+ Tbsp of heavy cream

Whip butter and vanilla together. Add powdered sugar and whip, then slowly the heavy cream. Frost cake and decorate with whipped cream borders and sprinkles or whatever theme.
