Yam Brownies- from Plant Powered Families
¾ c. cooked, peeled, and
cooled orange sweet potato
½ c. water (plus more to rinse out blender)
¼ c. pure maple syrup
1 Tbsp balsamic vinegar
2 tsp vanilla
1 c. ww flour
1/3 c. sugar (or coconut sugar)
¼ c. vegan chocolate chips
½ scant tsp salt
¼ c. cocoa powder
1 tsp baking powder
1 scant tsp baking soda
Preheat oven to 350. Lightly spray an 8x8 baking pan. In a blender, puree the sweet potato, water, maple syrup, vinegar, and vanilla until completely smooth. Pour out into mixing bowl and use up to 1/4c. extra water to rinse all the mixture out of the blender and into the mixing bowl. Add remaining ingredients and stir until incorporated. Transfer to prepared pan, and bake 21-23 minutes. Cool on rack.

never do; too much work.
Chocolate Sweets Frosting
1 c. loosely
packed cooked sweet potato
¾ c. coconut sugar or other unrefined sugar
½ c. cocoa powder
½ c. scant raw cashew or almond butter
¼ rounded tsp sea salt
2-5 Tbsp non-dairy milk
1 tsp vanilla
Puree all ingredients in
blender until smooth. Transfer to
container and refrigerate until ready to use.
It is a thick frosting. Thin with
more milk if desired.
