WFPB Cheese Sauce Instapot- from Little Blue Plates
This is my second favorite cheese sauce. It's better but more work. Still pretty easy though. Put all ingredients in Instapot (no need to soak cashews)
2 c. water
1/2 yellow or white onion, quartered
2 cloves garlic, halved
1 c. carrots, peeled and sliced
1 1/2 c. peeled and chopped yukon gold potatoes
1/2 c. raw cashews
1/2 c. nutritional yeast
2 Tbsp mellow white miso
1 tsp smoked or sweet paprika
2 Tbsp lemon juice
2 Tbsp acv
2 tsp sea salt
5 minutes in the Instapot. Then pour into a blender and blend until creamy, adding plant milk if necessary. Sauce will continue to thicken as it cools. Very cheesy delicious! Great on broccoli, nachos, noodles, etc.
If color needs a boost, paprika and tumeric can give it a nice orange cheese color.
