Vegan Lasagna
Alternate a simple tomato sauce without oil, 12
whole wheat lasagna noodles or prepared eggplant or zucchini, and tofu ricotta:
mash together with fork: 1lb. fresh firm tofu, 1 clove minced garlic, 1 Tbsp
nutritional yeast, salt, pepper, 1 Tbsp parsley, 1 tsp basil, oregano, 1 Tbsp lemon
juice, 1 Tbsp plant milk. Top with vegan parmesan if you like. I like this lasagna immensely and don’t feel
like I have to take a nap after eating it!
