Tortellini Soup- from Bren'mama
Makes a LOT. Feeds at least 8 with leftovers.
1/2 tube Jimmy Dean Hot sausage
1 medium onion, chopped
2 tsp garlic, minced
2 cans (15oz) Italian stewed tomatoes
1 can (15 oz) tomato sauce
2 1/2 - 3 quarts chicken broth (to taste)
½ tsp pepper, and salt to taste
18 oz bag fresh cheese tortellini
1 bunch kale, ribs removed, washed, and chopped (or substitute spinach)
In a large pot, cook the
sausage and onion together until all the red is gone from the meat. Add garlic, tomatoes, chicken broth, and
pepper/salt and bring to a boil. Add tortellini
and kale. Simmer for ½ hour, and serve. Even better the next day, though the noodles will get very soft sitting in broth.
