Thai Curry- Kim N.



Stir-fry in oil or water any vegetables you like. I like:
sweet bell peppers (orange, red, yellow)
sugar snap peas and/or broccoli (green)
white onion

Mix sauce ingredients together and then temper into the vegetables:

Sauce ingredients:
2/3-3/4 cup of water
2 cloves garlic, minced
4 Tbsp soy sauce or tamari
2 Tbsp cilantro
2 Tbsp honey
1 Tbsp curry powder (optional)
2 tsp sesame oil
1 tsp cornstarch
½ tsp crushed red pepper

Combine sauce and vegetables and let sauce thicken in the pan.  Serve over rice. *Can add the meat from a rotisserie chicken too, or other meats. Can also add a splash of cream or coconut milk if desired. Sprinkle toasted sesame seeds on top and serve.
