I think the best tea sandwiches are the cream cheese and cucumber ones, or cream cheese with spicy jam. But I made these for an event where someone was already making the other varieties. These are also fantastic, though they may seem weird. But generations of Utahns can't be that wrong. It's a blast from the past, as they used this recipe regularly for baby/bridal showers and luncheons.
-Buy one pound of good deli ham, and in a food processor whirl it into bits. Then mix in about 1/2 cup of good mayonnaise. This will make the bottom of the sandwich.
-Buy a jar of cheese whiz. It is easy to spread and doesn't tear up the bread. This will make the middle layer.
-Buy 2 large loaves of white bread. Bread must be soft and square shaped. You will need 42 pieces of bread total, but good to have a couple extra in case.
Now assemble. Remember not to spread the ingredients to the very edge, since the edges will be cut off.
Spread a spoonful of ham on top of 14 pieces of bread. This should use up all your ham.
Spread a spoonful of cheese whiz on top of 14 pieces of bread (like peanut butter) thickness
Now lay the dry side of the cheese whiz bread on top of the ham.
Top the cheese whiz piece with another plain piece of bread.
Slice off edges of these three tiered sandwiches, by sawing carefully down with a serrated knife. Then slice sandwich into three even fingers.
Arrange on a tray. Always keep cold and covered so sandwiches don't spoil or dry out. These would look lovely on a plate next to cucumber slices, and purple and green grapes.
Great for family parties, showers, or church parties (for kids and adults).

Fillings should be spread in a very thin layer. Then crusts removed, and sliced into squares, fingers, or triangles. Fill up a large serving plate (or Tupperware) with these and refrigerate until needed (same day is best).
