King Arthur's Classic 100% Whole Wheat Bread
1 1/8 c. lukewarm water
1/4 c. dry/powdered milk
2 1/2 tsp. yeast
1/4 c. pure maple syrup (or honey, or Black Strap molasses)
1/4 c. evoo, melted butter, or coconut oil
1 1/4 tsp. salt
3 1/2 c. King Arthur whole wheat flour (plus a bit extra for dusting)
You will need a large bowl.
Whisk powdered milk into the warm water in bowl. Sprinkle the yeast on top and let sit 5 or 10 minutes.
Stir the yeast in, and add in the syrup, the fat, and the salt. Then stir in the flower, reserving the last half cup to use only if the dough is still wet. After mixing all ingredients together, let's sit 20 to 30 minutes (cover with plastic).
Using a clean surface, and a little bit of flour, knead the dough for 8 minutes until smooth. Return to bowl to rise.
Cover with same plastic and let rise 2 hours in a warm place. (It will rise slowly since it is whole wheat flour- but it always depends on if you got the dough right and the temperature and humidity).
Punch dough down, knead once quickly, and shape into a loaf, and place in a greased loaf pan.
Cover with same plastic and let rise again for 1 to 2 hours in a warm place. (Longer time should make it lighter).
Bake at 350 degrees for 35-40 minutes.
Makes 1 loaf. Simple, delicious!
