Shortbread Cookies (Traditional from Scotland)
Christmas cookies!
1 c. butter (2 sticks)
2 c. flour
1/2 c. sugar
1/2 c. or so raw sugar crystals to top the cookies before baking, or various Christmas colored sprinkles
Mix and roll into balls. Roll in sugar and flatten slightly as you press the sugar crystals in. Bake at 350 for 10 minutes or so. You don't want them to brown.
These cookies are not too sweet and melt in your mouth!
(This could also be a great crust for lemon bars, pecan pie bars, twix bars, apple pie bars, or anything that needs a shortbread crust. Just spread dough flat in an ungreased 9x13 pan and bake until lightly browned).
