Russian Tea Cakes/Mexican Wedding Cookies
Round ball-shaped shortbread cookies that are covered in powdered sugar. These are nice for a Christmas plate of goodies, and also elegant and fun for bridal or baby showers.
1 c. butter, softened
3/4 c. sugar
1/2 tsp almond extract
1/2 tsp vanilla
2 1/4 c. flour
1/4 tsp salt
1 c. almonds or pecans, chopped fine and toasted
1 1/2 c. powdered sugar for rolling cookie in twice
Preheat oven to 350
Cream butter and sugar until fluffy. Stir in extracts. Then add dry ingredients, stirring until a soft dough forms. Stir in nuts.
Shape dough into 1 inch balls and place on and ungreased cookie sheet. Bake 15-20 minutes or until bottoms are lightly browned. Roll warm cookies in the powdered sugar, and then cool completely on wax paper. Once cool, roll again in powdered sugar and place on serving plate.
