Relief Society Wild Rice Salad
seasoned salt
2 c. cooked, diced chicken (rotisserie chicken works good here)
1 1/2 c. halved green grapes
3/4 c. mayo and perhaps a few drops of wine vinegar for some tang
1 c. cashews or almonds
Cook rice according to package directions (preferably in chicken broth) with seasoned salt.
Cool to room temperature. Spoon into large bowl. Add chicken, grapes, and mayo. Cover and chill. Just before serving, add cashews. Plate by serving a pretty scoop on iceberg lettuce leaves, or whatever greens you like.
*you can make up a package of Rice-a-Roni instead
**you can add to this salad, chopped celery, water chestnuts, fresh parsley, craisins, etc.
