Pat's Thai Curry
This meal is delicious and not too hard to make. Pat loves it, and figured out how to make it. Sometimes you might need to go to an international store for ingredients, but we can find everything at our local store and we grown our own thai basil.
2 Tbsp oil
2 chicken breasts
*cook chicken and shred (or cook a whole chicken and take the meat off and give it a rough chop- might need only half of the meat for this)
2 tsp grated ginger
3 shallots, diced fine (or substitute 1 medium onion)
3 Tbsp red curry paste
*saute
2 bell peppers, thinly sliced
1 large can cooked bamboo shoots
*saute some more
2 cans coconut milk
1/2 c. water
1/4 c. fish sauce
1/4 c. sugar
*cook down
Add at the end:
small handful of basil
small amount of mint and/or cilantro
Serve with Jasmine rice. To impress a crowd, you can add a sprinkling of chopped peanuts or cashews as garnish. Serve with lime wedges, chopped jalapenos, naan flatbread, spring rolls, or steamed dumplings.
*You can switch out vegetables for other things, or switch out chicken for shrimp, etc.
