Orange-Glazed Blueberry Scones

Panera has the best Orange scones. These are terrific also! I love just a biscuit for breakfast, don't really need the sweet in the morning. This might be best for a tea. 




2 c. flour, plus more for berries
1 Tbsp baking powder
1 tsp salt
1/3 c. sugar
1/4 c. butter cut into chunks, chilled
3/4 c. buttermilk or cream
1 egg
1 pint fresh blueberries, washed, stems removed, drained well

Preheat oven to 400 degrees

In a large bowl, sift together the dry ingredients. Cut in butter (a food processor works best, or freeze butter and grate it in, fluffing it with the dry ingredients). The butter pieces should be coated with flour and resemble crumbs. Put in fridge.

In another bowl, whisk together buttermilk and egg. Then pour into the flour/butter bowl, mixing until combined. Fold blueberries gently into the batter, being careful not to bruise them. 

Drop by large spoonfuls onto a greased cookie sheet (about 1/4 - 1/3 cup in size). Pat into more of an even circle so that it cooks evenly. Bake about 20 minutes until lightly browned. Cool before applying glaze. 

Glaze:
2 Tbsp butter
2 c. powdered sugar
1 orange juiced and zested

Combine and heat in microwave for 30 seconds. Stir until smooth enough to drizzle over the tops of cooled scones.
