No-Bake Peanut Butter Bars



Makes 8x8 pan, gluten free, vegan

I make this in a glass 8x8 pan to save getting so many dishes dirty.

1/3 c. + 1 Tbsp coconut oil
2/3 c. natural peanut butter (I use just the ground peanut with salt kind)

Melt in 30 second increments in microwave until you can stir it all together well. It will probably only take 30 seconds. Don't boil or burn. Then stir in:

1/3 c. cocoa powder (I like Ghiradelli Dutch process 100% cocoa)
1/3 c. + 1 Tbsp pure maple syrup
1 tsp vanilla
pinch salt
3/4 c. finely shredded coconut unsweetened OR quick oats

Smooth top and refrigerate until solid again. Slice into bars and scoop out. Messy but good!
