Hot Fudge -from the Jake and Amber Oldham
1 1/2 c. chocolate chips (all semi-sweet, or half milk chocolate- just use good quality chocolate because this will be the main flavor of the hot fudge)
1/2 c. butter (salted)
1/4 tsp salt
1 can evaporated milk
2 1/4 c. powdered sugar (can up this to 3 1/2 if you need to stretch it further for a crowd)
1 tsp vanilla
Melt 1 1/2 cups semi-sweet chocolate chips with 1/2 c. butter (take care to use good quality chocolate because this will be the main flavor of the hot fudge). I actually like about half milk chocolate.
Add in 1/4 tsp salt
Add 1 can evaporated milk and 2 1/4 cups powdered sugar. (you can up this to 3 1/2 if you need to stretch it for a crowd.
Bring to boil over med-low heat
Boil for 8 minutes stirring constantly, making figure 8's with a wooden spoon.
Then stir for 15 seconds off heat and stir in 1 tsp vanilla.
Serve over ice-cream. Makes 3 cups or 25 one ounce scoops/servings in case you are serving this to a crowd.
