Grammie's Caramels

I buy Werther's soft caramel candies. They are so good if you don't want to work. If you want to work, these are amazing!

Papi's mom, Grammie, made these caramels every year at Christmas time. They have been a tradition that Grandmama and Papi have kept up in their own family.

2 c. sugar
1 c. karo corn syrup, white
1 c. whipping cream

1 c. whipping cream

1 c. whipping cream
1 c. butter
a pinch of salt

1 Tbsp vanilla
chopped pecans (walnuts or almonds work too)

When cooking this recipe, use a large heavy kettle to avoid burning carmels, and an accurate candy thermometer. Cook on medium heat and stir constantly.

In a large pot add: sugar, karo, and 1 cup of cream. Cook over medium heat to firm ball stage, 248.5 degrees.

Add: 1 cup of cream. Cook to firm ball stage 248.5 degrees.

Add 1 cup of cream, butter, and salt. Cook to firm ball stage 248.5 degrees. 

Remove from heat and add vanilla and nuts. Pour into a buttered cookie sheet. Let cool. 

Grandpa (Papi) eats these plain, but also dips them in chocolate. He has also used this caramel to make caramel apples or to pair with marshmallows.
