Raw Tomato Sauce



Serve over hot spaghetti

For each serving you’ll need about 1 large ripe tomato.  While spaghetti is cooking, in a bowl mince 1 garlic clove, and add few pinches onion powder, a pinch oregano and a pinch salt.  Cut tomato in half, and using a cheese grater, grate both halves into the bowl.  You’ll be left with just the skins to toss in the garbage.  Drain noodles and toss in bowl with tomato sauce ingredients while hot. Add fresh basil and serve.  If you like, add roasted mushrooms or other veggies, vegan parmesan cheese, etc.

*if you want to use a blender or food processor you can whirl up the whole tomato rather than grating it
