Chicken Primavera



 I like angel hair pasta, but only had shells this day

1 c. red bell pepper sliced
1 c. mushrooms, sliced
1/4 c. green onions chopped
3 cloves garlic, minced
1/4 c. butter
2 c. whipping cream
1 Tbsp basil or to taste
2 chicken breasts already browned, cooked through, and sliced
salt to taste

Substitute veggies with: tomatoes, asparagus, spinach, zucchini, squash, Anaheim chilis, etc., as desired.

Saute veggies in butter and salt for about 10 minutes. Add garlic and sauté for another 5 minutes. You want the veggies to have a bite but not be crunchy. Add cream, basil, and chicken. Cook until thickened about 10 more minutes, and serve over pasta.

Can serve this over rice or mashed potatoes too. It is great! Below it is served over mashed Yukon gold potatoes.
