Cauliflower Mac n' Cheese (easy)
Bring a pot of water to boil and add a whole head of finely chopped cauliflower (about the size of peas). Boil for 15-20 minutes. Add about half a box of elbow noodles, or a whole box if you need to feed a lot. Cook together until noodles are done. Then drain off the liquid leaving just a bit to aid in the sauce.
Add directly to the pot and stir in:
2 c. freshly shredded
medium/sharp cheddar cheese
a scoop or two of sour cream
salt and pepper to
taste
a pinch or two of paprika, cumin, onion, garlic, and turmeric.
Stir together and it will create a nice
sauce. This is almost as easy as the box mix, and super delicious, with
vegetables that aren’t too noticeable!
*For extra flavor we sometimes add in a tiny bit of Dijon mustard, OR salsa. Pat likes sausage with it- like breakfast sausage links.
