Brenda's Tortillas
Makes about 18. You need a clean towel to steam them inside of once each one is cooked. You make a stack inside the towel. Unfortunately, we can't make them round like she does :)
4 c. flour
1 1/2 tsp salt
1 1/2 tsp baking powder
1/4 c. or a big dollop of shortening, coconut oil, or unsalted butter
1 1/2 c. warm water
Use a dough hook to mix this for 5 minutes on low. Add more water or flour a bit at a time if needed if it is too wet or dry. You need to be able to roll it out on the counter super thin, and then peel it up and cook in a unoiled frying pan. Cook both side for just a few seconds each. They should get nice light brown spots, not black, which means your pan is too hot. Once both sides are done, set in the towel, and cook the next, and so on, always keeping the cooked ones covered inside a clean towel to steam. Otherwise, you get crispy tortillas. Bren'mama can roll them out perfectly round, but we can't figure that out.
