Aquafaba
Unsalted bean water (usually off chickpeas, from the can). The proteins in the bean water combine and whip just like egg whites.
Whip in a stand mixer for about 6 minutes to form peaks. You can throw in some cream of tartar to make it whip quicker. Use immediately or refrigerate.
Use as vegan mayo, or in place of egg whites in recipes like for macaroons, cookies, waffles, etc. Sweeten and use it like whip cream
